SUMMARY
The Belly Up aspen Beverage and Operations Manager is responsible for developing and maintaining a cost-effective operation that exceeds guest expectations through high-quality food and beverage service in a clean, safe, and welcoming environment.
This role has overall responsibility for all aspects of the Belly Up Aspen (BUA) food and beverage program, including sales, profitability, and team development. Working in close partnership with the General Manager and Assistant General Manager, the Beverage and Operations Manager oversees operations and ensures all activities align with company policies, programs, and procedures while delivering exceptional guest experiences and strong financial performance.
ESSENTIAL FUNCTIONS
• Oversee all aspects of bar and cocktail server operations before, during, and after concerts and private events.
• Ensure the Belly Up Aspen beverage program meets or exceeds budgeted financial goals.
• Execute opening and closing managerial procedures in accordance with established protocols
• Maintain quality across all bar and kitchen areas, including beverage, food, service, and physical environment.
• Develop and implement best practices for pre-orders, bottle service, and high-touch service in reserved/VIP sections.
• Curate and maintain the beverage menu in alignment with ownership and leadership vision.
• Uphold high standards of safety, security, cleanliness, and sanitation.
• Conduct daily walkthroughs of coolers, storage areas, bars, and kitchen; identify and address maintenance, cleanliness, or repair needs.
• Proactively identify operational challenges and resolve them in the best interest of guests, staff, and leadership.
• Maintain strong floor presence and situational awareness during all shifts.
• Make timely, clear, and effective decisions in a fast-paced environment.
• Assist in overseeing purchasing for the beverage program.
• Organize and manage monthly inventory of FOH supplies and product in coordination with the General Manager.
• Coordinate food and beverage needs for performing artists in partnership with the hospitality team.
• Utilize technology platforms to generate reports for ownership, the General Manager, and Controller.
• Manage Toast POS administration, including system programming to optimize reservations and maintain FOH/BOH controls.
• Ensure accurate and ongoing database maintenance across systems (e.g., Toast, BevSpot, 7Shifts).
• Collaborate with Marketing and Business Development to execute seasonal promotions and special events.
• Oversee departmental operations during pre-opening phases for concerts and private events.
• Maintain appropriate staffing levels and adjust based on business needs in partnership with the General Manager.
• Support recruitment, hiring, onboarding, and training of high-quality team members.
• Ensure timely completion of onboarding documentation, payroll setup, and new hire paperwork.
• Develop and implement training programs that motivate and elevate team performance.
• Directly manage bartenders and servers; provide ongoing coaching, feedback, and performance evaluations.
• Support disciplinary processes in coordination with the General Manager and Human Resources.
• Foster a collaborative, respectful, and positive team environment.
• Promote a culture of diversity, equity, and inclusion where all team members feel valued and supported.
• Maintain facility cleanliness and sanitation in compliance with City of Aspen Health Department standards.
• Keep sanitation documentation inspection-ready at all times.
• Perform other duties as assigned by leadership.

QUALIFICATIONS
• Minimum 3+ years of FOH management experience in high-volume bar, restaurant, or venue environments.
• High-volume operational experience required; concert venue experience required.
• Strong understanding of multiple FOH roles and service standards.
• Solid financial acumen, including budgeting, cost control, and inventory management.
• Experience with purchasing and inventory systems.
• Proficiency in relevant technology platforms (Toast, BevSpot, Excel, 7shifts, Outlook).
• Strong problem-solving skills with the ability to think quickly and act independently.
• Positive, energetic, and team-oriented leadership style.
• Current TIPS certification (City of Aspen required).
• Open availability required, including nights, weekends, holidays, and extended shifts as needed.
